Why the flow only goes one way
Accepted, in the kitchen, ready, on the way, delivered. Nothing skips and nothing goes back, because a board that can be edited backwards stops being a record of what happened.
Did not arrive is an end state rather than an undo. The food is gone and the money may not be, and both of those need to survive.
